CHROMA HAIKU pro knives are manufactured under the supervision of Master Daikichi. The Haiku Pro is designed for the up-scaled professional Japanese market,especially Sushi masters. There are 83 steps in the production: In accordance with the Sakai tradition, the Haiku Pro knives are not manufactured in one large factory. Each knife is the work of 4 specialized workshops. Once you understand the philosophy of Haiku Pro knives, you will never use another knife again. If you take care for your knife, they will last you your professional life. The Haiku Pro knives are given an antirust treatment, wrapped in antirust paper, and then carefully packaged in a “kiribako” (wooden box). The wood helps keep the knife dry by absorbing moisture, thereby reducing the risk of the blade rusting. Each knife comes with a bottle of Hamanono Abura oil (rub some on the blade after each use to prevent rust) and a Japanese shawl.
